Recipe: Braised pork chops in a wine apple sauce

Oh yeah, it came out just as good as it sounds :) 


5 or 6 pork chops the thicker the better
1 apple thinly sliced
1 or 2 large potatoes also thinly sliced
1/4 bottle white sparkling wine
2 tbs honey
sage
pepperoncini
oregano
salt
pepper to taste


place chops in baking pan, cover with wine (put however much you want, the more more you put, the juicier they will come).  Drizzle the pork with honey, and all other spices to taste.  layer the apples and the potatoes on top and sprinkle with salt.  
Place in 350* oven (not celcius!)  let bake approximately 10 minutes and check.  If steaming carefully flip meat, if not, wait another 5 minutes and then turn.  If they are thin, turn sooner.  Let them cook another 5 minutes, 10 max.  Don't let all of the wine cook off.  And feel free to add more, if it's waning. 
And done!
Simple!

Recipe: chocolate chip cookies


well, I'm still perfecting the recipe, but they came out pretty good anyway :)  I apologize for the lack of precision, i don't have any measuring utensils and i'm translating everything from Italian...

1 cup flour
1 cup sugar
1/2 cup brown sugar lightly packed (I accidently overpacked mine)
1 egg (although i think 2 would be better)
1 stick of butter (approximate, because here they go by grams, and i used less i think)
1 small package vanilla (in the states 1 tbs vanilla extract) 
1/2 package baking soda equivalent lol  (prolly 2tbs) 
1/2 200 gram br of chocolate chopped up

Preheat oven to 170*c

Take all dry ingredients and mix into a bowl
Add egg and butter and mix together until cookie dough consistrncys achieved.  If the dough gets too sticky add a little bit more flour. 
Place aluminum foil in pan for easy cleanup, roll dough into 1/2 inch to inch balls and space carefully in pan. Bake until slightly golden.  Remove from pan and place on paper towel in sealable tuperware to maintain soft baked quality :) 
I'll still be editing this recipe though.  It's kind of necessary :)

Recipe: Honey Turkey fingers...

like chicken fingers, but a little sweeter and actually leaner :) I'm going for cooking cheaper and leaner, so turkey breast is a great replacement to chicken...

So basic recipe 1 turkey breast cut into slices or if available you can just buy prepackaged cutlets... However, unfortunately, presliced was not available, so I had to do it myself which I don't mind except I only just realized how not well-stocked my kitchen is. There's no butcher knife, just the serrated kind. I don't know if you've ever tried to cleanly slice raw turkey breast, but let me tell you, it doesn't actually work out overly too well, just well enough to do what I was doing, but with added cursing lol.

Alright I've gotten off track, here's the recipe list:
1 turkey breast sliced, or cubed, however big you like your turkey fingers :D
1 egg
1-2 tablespoons honey
app. 1 cup bread crumbs (I kind of eyeballed it like usual lol...)
pepperoncino (otherwise known as red pepper flakes) as desired
a pinch pepper
a pinch salt
oregano as desired
basil as desired
Olive oil for pan
So quite simply, crack your egg, add your honey and salt and stir. In another bowl or plate add bread crumbs and all other spices, mix throughougly (I may have spelled that wrong... but spell check I don't think is functioning lol). Take your turkey, dip in egg mixture and then completely cover in breadcrumbs.
Heat oil in pan, add turkey, cook on each side until browned, and until center is white. When done place onto paper towel (to drain any excess oil) and serve while still warm, although they're pretty fantastic cold too ;)
Simple and yummy and for your reading pleasure, or I suppose looking pleasure, I'm adding pictures, just to make you a little bit hungrier...
all set up and ready to go assembly line style :)

and for final serving purposes, eat with a bed of lettuce, some tomatoes and balsamic vinegar, with some fresh Italian bread on the side

Red Velvet...

my cupcakes without frosting, I have to get the other pictures from Giulia, with the cupcakes all finished, and there was another cake as well

So for the last few weeks, I've been wanting to make cupcakes.. and I finally did yesterday, I spent almost the entire afternoon baking... I made 24 cupcakes and 2 mini cakes... yes exaggerated I know, but it made me feel a little calmer and put me into a tranquil place... lol and I only ate 2 cupcakes (red velvet of course) and a little bit of cake, which considering is not bad at all... they came out delicious even though I had no measuring utensils lol...
Red velvet and chocolate cupcakes, yes I had a good day yesterday... and I shared lots of cupcakes!! :) they're currently almost gone...
I'll post more pix up later but for now I have to write.

So I really want to make cupcakes today, I'm not sure if I'll have time to go to the store to get ingredients, but either today or tomorrow! lol I think I want to make them tonight, so maybe I'll get my ass over to the store before dinner.... we'll see!

Too full...

I think I may be too full to ever eat again... I managed to get to the wedding this weekend even though I went to Middlebury on Friday... Apparently I was given the undergrad schedule and they had to be there friday, grad students need to be there on Monday, Tuesday.... soooo yeah, came home for the wedding, going back tomorrow... Yay for 5 hour drives!!
In any case I ate an incredible amount of food at this wedding, and once I load up my pix I'll post some of the delicious delicacies... But it all started with Cocktail hour, in which not only did I have champagne and an apple martini, but I had a ton, and I do mean a ton to eat. I ate a little bit of rice with my Mexican tapas and chicken fajita with guacamole, sour cream and cheese. I had pasta with broccoli rabe sprinkled with pepperoncino. I had fresh mozzarella and tomatoes with some broccoli on the side. I had a rice ball and fresh focaccia bread, one pizza style the other, whole grain goodness... I had some calamari and some other random stuff that the waitresses brought around. I only ate a little of each, but it filled me up sooooo much!! I am sooo glad I hadn't eaten beforehand... I skipped breakfast and lunch, so I do have a small amount of foresight....
Then as if that wasn't enough food, real dinner began. There was a salad that I barely touched, although I did eat a piece of bread with it... And I had a glass of champagne and maybe 2 glasses of red wine... Then there was some dancing, then came the rigatoni pasta with tomato sauce a ricotta cheese. Don't know why I ate it, but I did... Then there was more dancing and we came back for our main courses, filet mignon and a potato croquet with string beans and carrots on the side. I ate the string beans, had some of the potato (not much though) and most of the filet, quite tasty!! seriously though at this point I thought I was going to bust!!!
Then of course there was more dancing, and a mini tribute to michael jackson, a mini medley of jackson in which the singers came out onto the dancefloor and performed some moves... the best mimicker turned out to be a white guy in the audience. Hilarious by the way!! Then we did the wave and numerous other silly things.... Just so we could make room for dessert...
Because then, it was time to cut the cake!! sooo pretty by the way!! and it was vanilla cake with a cream with fresh strawberries in it!! OMG it tasted amazing like strawberry shortcake!! ahhh I was in absolute heaven!! Oh but it didn't end there, oh no, as if that wasn't enough food to kill a baby elephant, no there was more. We had the mother groom dance and the father bride dance, even a tribute to the parents song, and then it was time for dessert overkill!!
A Viennese table. I don't know if you've ever heard of this setup, but it's very very Italian... Basically in this case it wasn't a single table, but six... There was a table of very indulgent cakes, of which I chose not to taste even though they looked fabulous... There was a table with ice cream and toppings, and then another section with three chocolate fountains, milk, white and dark, and various things to cover. Then there was the table with fruits, a table with traditional italian desserts, a table with cookie like things and a final table that I didn't really see because there was too much of a crowd and I really just wanted to eat my ice cream...
Of all of this, I had chocolate ice cream with some m&ms and an oreo, 1/2 a marshmallow covered in milk chocolate, 5 strawberries covered in the dark chocolate and then an actually chocolate covered strawberry that didn't come from the fountain. I had a cannoli as well... There was more in my plate, but my eyes were definitely bigger than my head at that point....
And then I danced some more to burn off all of the excess calories, and never once did i take off my awesome bronze gladiator sandal stilettoes... So yes, I rock...
And feel so full, that I could burst...
but it was a lot of fun, and therefore worth it... I'm hoping my stomach will be empty and feeling tranquil by the time I get in the car for my 5 hour drive tomorrow!!

Carbonara please!!



Don't know why I'm suddenly in the mood for Carbonara pasta. I know how to make it, and it's utterly delicious if somewhat complicated. Maybe I'll be able to have some later this week! The image is Paula Dean's Tuscan Carbonara, and seriously I'm salivating!

The image underneath, isn't really carbonara, but I'd love to try it anyway! It's Giada's version of Carbonara. (Giada's Carbonara) (Recipe courtesy Giada De Laurentiis) but it's not a real carbonara at all. It just looks yummy!! It's a little bit healthier because it doesn't use cream and changes the egg ratio, probably making it easier to make in all honesty and it uses yummy asparagus. But we shall see, which I actually decide to try to tackle later this week! Creamy or healthy?? it's a toss up...

oh wait, I found another carbonara option, this was more traditional but it also has broccoli, choices choices choices, now what do I do?? suggestions anyone???

Beer Can Chicken



Okay I kind of want to make this for the barbeque! It caught my eye on foodnetwork. It's called beer can chicken, and it's sitting on top of a 3/4 full can of beer!! It seriously amuses me, and i kind of really want to try it on Sunday so I may buy a chicken tomorrow!! It looks pretty simple (Beer Can Chicken Recipe)
Sooo we'll just see!! Yummy, yummy, yummy!!

Soo many good things to eat...

I was flipping through my pictures and found this. I kind of want to make it again some time... Braised pork chops with a brown mushroom sauce, lots of mushrooms on the side and lots of salad with a basic red wine vinaigrette, feta and raspberries! mmm mmm good!!!!


I'm not hungry right now, but I could be if I keep flipping through food pictures!! Not gonna keep doing that.... lol

Mangiables Unite!!

Said for the first time accidentally by yours truly. Creating words is what happens when a bilingual person becomes an insomniac... It's exhaustion at its best.

So the Mangiables have begun! Food is the goal!

Food, glorious food! So it's been decided that we LOVE food! I'm constantly cooking and creating and then of course eating said food. It's kind of awesome. So a blog became utterly necessary, so we can share our creations even from a distance. Soon enough we'll all be separated, and in different parts of the world, so this is just another connector, another way to hold us together.

This site is a place where we can talk about food, making it, eating it! Whatever we want! I'll even post some random recipes and pictures and make you all wish you were in Italy with me! We can post old favorites, quirky ideas, the great things we eat everyday, so on and so forth.

Food, so yummy! Let's talk about it!
